Whole quail is best when roasted perfectly with crispy skin. Roasted quail is very lean and can be easily overcooked, so the key to the perfect roast quail is to cook it quickly and allow it to rest before serving.
Quail Roasting Tips
- Let the meat come up to room temperature before cooking.
- There's not much fat on a quail. You can try wrapping it in fatty bacon or pancetta to stop it drying out when roasting and add additional flavour.
- Some people add stock or dash of white wine to the pan halfway through cooking.
- Don't forget to rest the meat before carving. This allows the meat to relax and distributes the juices throughout. A general rule of thumb used by chefs for resting meat is 1 minute for every 100g of meat.
