These are quick cooks, but they still need proper control. Brown outside does not prove the middle is safe.

Method

Cook it in order.

  1. Preheat the grill and oil the grate if needed.
  2. Cook over medium heat rather than fierce flame.
  3. Turn regularly for even cooking.
  4. Move to indirect heat if the outside colours before the centre is done.
  5. Check the centre before serving.
Avoid

Common mistakes.

Pressing burgers and losing juices.

Burning sausages over flames while the centre stays undercooked.

Leaving cooked food beside raw meat.
